  • 2 cups white spelt flour
  • 2 cups oatmeal
  • 1/2 teaspoon baking soda
  • 1/8 cup sugar
  • 1/2 cup brown sugar
  • 14 tablespoons butter
  • 1 egg

·         Cut the butter into small cubes and soften. Preheat oven to 400F. Grease a cake pans or 6 individual and small cake pans.



·         Mix flour, oats, baking soda, and sugar. Put the butter on top and mix everything quickly with the palms and fingers of both hands to form a powder.

·         Transfer the flour to the bowl of the mixer. Mix the eggs and the mixture to make flour.

·         Spread 2/3 of the flour in the bottom of the pan. Cover with rhubarb jam. Roll the remaining dough into strips or buttons and place on top of the cake.
